For the Waffles:- 200g glutinous rice flour (also called sweet rice flour or mochi flour)
- 2 tbsp ube powder (or ube halaya for deeper colour)
- 3 tbsp caster sugar
- 1 tsp baking powder
- ½ tsp vanilla extract
- 240ml plant-based milk (oat or coconut work beautifully)
- 60ml coconut oil, melted (plus extra for greasing)
- Pinch of salt
- Fresh berries (strawberries, blueberries, raspberries)
- Maple syrup or agave nectar
- Coconut whipped cream
- Extra ube powder for dusting
- Toasted coconut flakes

Prepare Your Ingredients
Gather all your ingredients and measure them out. Melt the coconut oil and let it cool slightly. Preheat your waffle iron according to manufacturer's instructions – you want it nice and hot for that perfect crispy exterior!

In a large mixing bowl, whisk together the glutinous rice flour, ube powder, caster sugar, baking powder, and a pinch of salt. Make sure there are no lumps – the ube powder can be a bit clumpy, so break it up well for that gorgeous even purple colour throughout.

Don't overmix – just combine until there are no dry patches.
